Oven roasted veggies

I always loved cooking with my Grandmother and Mother as a little girl and somethings have never changed, I love being in the kitchen with these Italian women as they cook. The tradition continues as my children like to accompany us as well.

I like to think of myself as a great cook although my grandmother and mother make everything taste better. One of my mother’s simple dishes that I enjoy throughout the year, but especially during the summer is her oven roasted vegetable dish. As I can not think of eating junk food and then sitting by the pool.


When my mother decided to make this dish on a whim, I knew I needed to pay attention and not just for the words, “Lunch is ready”.




This time she used heirloom tomatoes from the store.


Fresh thyme from her garden

She will first put the zucchini in the baking dish

Then she will fill it up with the tomatoes, mushrooms, onions, yellow squash, red and orange peppers along with olive oil


After we set the oven to 425 for 15 minutes

Then the words that I always love to hear, lunch is served!
